The Bay Leaf Restaurant brings Indian cuisine to Cranbrook from a base inside the Days Inn hotel. Led by chef and owner Dilip Chand, the restaurant reflects a cooking background shaped across Nepal, India, the Middle East, and Canada.

THE KITCHEN
Dilip Chand trained in India before working internationally, including time cooking in Bahrain, and later holding chef positions in Ottawa and Kelowna. That experience informs a menu focused on balance, depth of flavour, and consistency rather than novelty.
The Bay Leaf draws on Indian culinary traditions while remaining approachable for regular dining in Cranbrook.
